Ham, Cheese & Asparagus Puff Pastry:

-1 box puff pastry
-8 slices ham
-24 spears of asparagus
-8 slices havarti
-egg wash
-poppy seeds and sesame seeds

* Preheat oven to 400 degrees. Roll out puff pastry, then cut into 8 squares.
* Top each square with a slice of ham, 3 pieces of asparagus, and one slice of cheese. Bring opposite sides together and secure with egg wash.
* Brush each pastry with egg wash and sprinkle with poppy seeds and sesame seeds. Place onto a parchment-lined sheet pan, then bake for 15-17 minutes until golden.
Spring & Tonic:

-1.5 oz. gin
-1 oz. St. Germain
-1/2 oz. lemon juice
-tonic water for topping off
-sliced lemons and fresh mint for garnish
