Creamy High Protein Broccoli Pasta 🥦💪This pasta has ~40g of protein & over 1 cup of veggies per serving thanks to 2 secret ingredients: cottage cheese & eatbanza pasta! #banzapartner

Ever since I’ve been pregnant, I’ve been struggling a bit to get enough protein (and vegetables, honestly). Thankfully I haven’t had major nausea or aversions, I’m just mostly craving carbs 😆

I’m all about finding super quick & easy sources of protein that I don’t really have to think about. Banza chickpea pasta is perfect – it has 20g protein per serving and can be used in literally any recipe! It also tastes just as good as regular pasta, so it’s one of my favorite pantry staples.

To add even more protein, we made a super creamy broccoli sauce with cottage cheese, bringing the total protein per serving up to almost ~40g. And most importantly, it tastes delicious!! 

I like to top mine with some burrata (bc why not), but it’s also delicious on its own.

Creamy High Protein Broccoli Pasta (2-3 servings)

1 box (8oz) Banza Chickpea Pasta (I used cavatappi but they have lots of shapes)
2 cups broccoli florets
1 tbsp olive oil 
1 cup finely chopped leeks 
2 cloves garlic, minced 
1 cup fresh spinach
1 cup cottage cheese
1/4 cup grated parmesan 
1/2 cup hot water or milk
Salt and pepper to taste
Juice from 1/2 lemon 
Optional: Burrata for topping 

Cook the pasta in salted water according to package directions. 

Add 1 inch of water to a pot and place a steamer basket on top. Bring water to a boil, then add the broccoli florets and steam for ~7 minutes, until fork tender. 

Meanwhile, heat olive oil in a small skillet. Add the leeks and sauté for 5 minutes, until softened. Add the garlic and cook for 2 more minutes. 

Add the leek/garlic mixture, steamed broccoli, spinach, cottage cheese, grated parmesan, water, salt and pepper and lemon juice to a blender and blend until completely smooth. 

Pour the sauce over the cooked pasta and stir until coated. If the sauce is too thick, add 1-2 tbsp of hot water to loosen it up. Optional: top with burrata and fresh herbs of choice before serving.
