This is the kind of recipe that looks super fancy and complicated, but as long as you have a bit of patience, it’s actually quite simple and only requires a few basic ingredients! 

We steep lots of garlic and fresh herbs in whole milk and heavy cream, then soak the thinly sliced potatoes in the milk mixture and layer them in a pan. The infused milk adds so much flavor to the potatoes and keeps them moist and super soft – it’s the most important part of this recipe! 🥛gonnaneedmilk

This is such a delicious side dish and you can mostly make this recipe the day before, and finish it off with the broiled cheesy topping just before serving!

Dauphinoise Potatoes 

3 lb. Yukon gold potatoes
1 cup whole milk
1 cup heavy cream
4 large cloves garlic, sliced thinly
1 tbsp kosher salt
2 tsp peppercorns
1/4 tsp nutmeg
3 sprigs thyme
1 sprig rosemary
1.5 cups shredded cheese (we used mozzarella, gruyere and parmesan) 
Butter for pan

Preheat oven to 325F. 

Add milk, heavy cream, garlic, salt, peppercorns, nutmeg, thyme and rosemary to a saucepan over medium-low heat. Bring to a simmer for 5 minutes, then remove from heat and let it steep for 20 minutes before straining. 

Slice potatoes between 1/16-1/8-inch thick using a mandoline. Grease a 8x10” baking dish well with butter. 

Dip each potato in the infused milk, then layer the potatoes in the pan without overlapping slices (you want even layers). Repeat with all potatoes, then pour any remaining milk over the top. 

Bake for 90 minutes, then remove from the oven. Let cool slightly, then place a sheet of parchment paper on top, then another slightly smaller pan. Set something heavy on top (like a skillet) for 30 minutes to compress the layers. 

Heat oven to broil. Top with cheese and broil for a few minutes, until the cheese is melty and golden brown. Let cool slightly before slicing.
