Creamy Buffalo Chicken Chili 🥣 The best 45-minute cozy fall dinner! #primalkitchenpartner

We’ve already made this chili 4 times this month 😅 it’s THAT good! It’s packed with shredded chicken, white beans, cheddar cheese, Primal Kitchen Buffalo Sauce & sour cream (or Greek yogurt) for creaminess. Better yet, it’s super easy to make and only takes 45 mins!

PrimalKitchenFoods is our go-to brand for condiments, dressings & more and their Buffalo Sauce (made with avocado oil) is one of my personal favorites!! I genuinely have some almost every morning on scrambled eggs 🍳

This recipe is perfect for a weeknight – you can also make it in a slow cooker. (It’s also great for tailgating!)

Buffalo Chicken Chili

2 tbsp Primal Kitchen avocado oil or olive oil
1 yellow onion, diced
4 cloves garlic, minced
1 cup thinly sliced celery
1 tbsp all purpose flour
1 1/4 tsp kosher salt
2 lb. chicken breast
1/2-3/4 cup Primal Kitchen Buffalo Sauce (depending on your spice preference)
1 14 oz can diced tomatoes
2 1/2 cups chicken broth
1 can white or pinto beans, drained and rinsed
1/2 cup greek yogurt or sour cream
1/2 cup shredded cheddar cheese

Heat avocado oil in a large soup pot over medium heat. Add onion and sauté for 2-3 minutes, then add in garlic and celery and continue cooking for 2-3 more minutes.

Stir in the flour and salt and let it cook for a few seconds, then add in chicken, buffalo sauce, tomatoes and chicken broth. Stir well, then bring to a boil. Cover and reduce heat to low. Simmer for ~20 minutes, until the chicken is cooked through.

Remove the chicken and use two forks to shred it. Optional: for a creamier chili (my preference), use an immersion blender to blend the broth. You can leave it as chunky or as smooth as you’d like.

Add back in the shredded chicken, beans, yogurt & cheese and continue cooking for another 5 minutes before serving.

You can find Primal Kitchen at any of your local retailers like Walmart, Fresh Market, Whole Foods & Kroger! You can also get 20% off online at primalkitchen.com with our code CROWDED20! #primalkitchen
