Triple Chocolate Sheet Cake with Fudge Frosting! Yes, please! Sheet cakes are the easiest of easy and there is just something so delightful about them! They’re fun to decorate, too!
1 1/2 cup all purpose flour
1 1/4 cup granulated sugar
6 tablespoons unsweetened cocoa powder
1/2 tablespoon instant expresso powder
1 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup of your favorite oil
1 large egg + the white of another
1/2 cup buttermilk
1/4 coarsly chopped semi sweet chocolate
1 cup hot coffee (strong)
Preheat the oven to 350 F. Grease and line your pan with parchment paper. I used a 6x10x2 ceramic pan. In a large bowl, sift together the all purpose flour, sugar, unsweetened cocoa powder, baking soda, baking powder, espresso powder and salt. Set aside.
To the bowl of your stand mixer add the oil, eggs, and buttermilk. Mix until completely incorporated. Add in the chopped chocolate. Slowly add in half the dry ingredients. Stop to scrap the side and bottom of the bowl. Add in the coffee slowly. Mix until just incorporated. Add in the remaining dry mixture. Pour the batter into your prepared pan and bake 40-45 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely before frosting.
Chocolate Fudge Frosting
1 cup of unsalted butter
1 cup unsweetened cocoa powder
5 +/- cups powdered sugar
1/2 cup heavy cream
Add your butter to a sauce pan and melt over medium heat. Once melted stir in your cocoa.
Transfer the mixture to the bowl of your stand mixer. With mixer on low speed, add in powdered sugar and cream, alternating between the two until desired consistency is achieved. Whip the frosting an additional 2-3 minutes or until lighter and fluffy. Ice the top of your sheet cake evenly! You may have leftover frosting depending on desired thickness.
