## Caption

Strawberry Chamomile Cake! 🍓🌼

Cake:
2 cups All Purpose Flour
1 1/2 cups Granulated Sugar
3 1/2 tsp Baking Powder
1 tsp salt
1/2 Cup Oil (your favorite)
3 Eggs (at room temp)
1 cup Milk (at room temp)
1/3 cup dried chamomile (ground into powder)

Preheat oven to 350°. Grease 4 6” cake pans and line with parchment paper. Set aside.
Combine the flour, sugar, baking powder, and salt. Sift to combine. Add the oil, eggs, milk and chamomile. Mix by hand or with an electric mixer until evenly combined and lump free. This should take 1-2 minutes.
Pour the batter into your pans Bake for 20-30 minutes - or until a toothpick inserted in the center comes out cleanly.
Allow the cakes to cool in their pans for 30 minutes before carefully transferring to a wire rack to finish cooling.
Once the cakes are cool you may begin working on the frosting.

Compote: 
4 cups strawberries (diced)
1/2 cup sugar
Juice of 1 lemon
Place all ingredients in a sauce pan and cook on medium heat until strawberries soften and a thick sauce forms. This should take 30 minutes. Make sure to stir consistently to prevent scorching. Remove from heat and allow to cool. 

Frosting:
1 cup Unsalted Butter (softened)
5-6 cups powdered sugar - depending on desired consistency
1/4 cup heavy cream

Add the butter to the bowl of your stand mixer fitted with the whisk attachment. Turn the mixer on low and add in the powdered sugar 1/2 cup at a time. Once you’ve added 2 cups a sugar add in a splash of cream. Continue adding sugar until desired consistency is achieved. If the frosting is too thick you can add more cream. Lay down your first cake round. Using a piping bad make a ring around the edges of the cake to form a boat. Add in a few spoonfuls of the strawberry compote spread it out evenly. Stack another round on top of the first layer and repeat the process two more times. Once you get to the top layer cover the whole cake in remaining frosting and decorate however you desire!
