2 salmon filets, skin-on
1 medium eggplant, diced
1 pint cherry tomatoes (left whole)
2 cups dried orecchiette pasta
3 to 3 ½ cups vegetable or chicken broth (or water)
1 clove garlic, minced
1 teaspoon smoked paprika
½ teaspoon cumin
2 tablespoons fresh basil, roughly torn
¼ cup crumbled feta cheese
2 tablespoons olive oil
Salt and pepper to taste
Lemon wedges for serving (optional)
-Heat 1 tablespoon of olive oil in your CeramiClad™ pan over medium-high heat. Season the salmon filets with salt and pepper. Place them skin-side down and cook for 4-5 minutes until crispy. Flip and cook for another 2-3 minutes. Remove from the pan and set aside.
-Wipe the pan clean. Heat 1 tablespoon of olive oil, add the diced eggplant and sauté for 5-7 minutes until golden and tender. Add the whole cherry tomatoes and cook until they start to blister, about 3 minutes.
-Stir in the garlic, smoked paprika, and cumin. Add the 2 cups of orecchiette, tossing to coat. Pour in 3 cups of broth and bring to a simmer. Lower the heat to medium, and stir occasionally to ensure even cooking.
-As the orecchiette cooks, add more broth if needed to keep it from drying out. Stir frequently until the pasta is al dente, about 10-12 minutes.
-Stir in the fresh basil and sprinkle with crumbled feta. Return the salmon filets to the pan to warm for 2-3 minutes. Serve with lemon wedges.
