taco salads are superior (if you can even call this a salad?😂) recipe below!!! 

Ingredients: 
-Romain lettuce 
-taco meat: 1lb ground beef, 1/2tsp onion powder, 1tbsp garlic powder, 2tsp ancho powder, 3tbsp tomato paste, 1.5c beef broth, 2 bay leaves, 1 minced garlic clove 
-Cherry Tomatoes (quartered) 
-Shredded cheddar 
-Tortilla trips 
-sliced avocado 
-Lime crema: 3-4tbsp sour cream, juice from 1 lime, 1 grated garlic clove, salt 
-Salsa (any kind you like!) 
-1 can black beans (drained and rinsed) 
-Red onions (diced) 
-Jalapeños (preferably micro) 
-cilantro 

Recipe: 
-in a large pot on medium heat add 1lb ground beef. Mash up beef into small pieces. Once mostly browned add garlic, onion, and ancho powder. Cook till fragrant then add tomato paste, stir. Add broth and bay leaves and bring to a simmer until the liquid is reduced 30-45min. Remove bay leaves, salt to taste and add minced garlic. Cook for another 2-3 min 
-while the beef is cooking prep the other ingredients. 
-mix sour cream, lime juice, salt and garlic. Taste and adjust 
-in a large bowl add romaine lettuce, red onions, tomatoes, black beans, cheddar, ground beef, jalapeños, avocado, cilantro, salsa, tortilla strips and top with lime crema. Enjoy cutes 🫶🏼
*PS you’ll have left overs of mostly everything so just store separately in the fridge for easy salads during the week:)
