## Caption

I was OBSESSED with these as a kid, it’s so nostalgic plus insanely flavorful 😮‍💨 **inspired by P.F. Chang’s iykyk** recipe below!!! 

Ingredients: 
-1lb ground chicken (or turkey) 
-1.5tbsp Peanut oil 
-1/2 white onion (finely diced) 
-1cup finely diced bell peppers 
-3/4cup minced water chestnuts 
-sauce: 2tsp sesame oil, 1.5tsp grated ginger, 3 garlic cloves (grated), 1/4cup soy sauce, 6tbsp hoisin sauce, 2tbsp rice vinegar 
-1/4cup toasted peanuts (plus more for topping) 
-salt, pepper 
-chopped green onions 
-butter lettuce 

Recipe: 
-toast peanuts for 5-10 min until golden at 350°F 
-in a pot on medium heat add sesame oil, ginger and garlic. Cook for 1 minute and add soy sauce; hoisin sauce, and rice vinegar. Bring to a simmer and remove from heat. 
-heat a large pan on med heat. Add peanut oil, and ground chicken. Break up with spatula or masher. Add a pinch of salt and pepper. Cook for 5 min. Once chicken starts to brown add onions and bell peppers. Cook until onions are translucent (5-8ish min). Add water chestnuts. Cook for 2 min. Add the sauce and bring to a simmer until everything is fully coated. 
-remove from heat and add peanuts and green onions, stir. Add to butter lettuce. Top with more peanuts and green onions :)
