My favorite tomato soup ever 😮‍💨 (definitely can taste the bell peppers a little but I LOVE it like that!) recipe below!!! 

Ingredients: 
-3 lbs roma tomatoes 
-1 head of garlic 
-1 sweet onion (diced) 
-1 red bell pepper (diced) 
-1 medium carrot (diced) 
-2cups chicken broth 
-1/3c heavy cream 
-1/4c packed Basil 
-1/4tsp Red chili flakes 
-1/2tsp dried oregano 
-2tbsp butter 
-1 1/2 tbsp tomato paste 
-1tsp honey
-olive oil 
-Salt and pepper to taste 
-grilled cheese (I used sourdough bread, butter, sliced havarti, sliced provolone and shredded sharp cheddar) 

Recipe: 
-preheat oven to 450°F. Quarter the tomatoes and toss in olive oil and salt. Add to a large cookie sheet with parchment paper 
-Cut off the top of the garlic and drizzle with olive oil. Cover with foil. 
-add tomatoes and garlic to the oven. Cook for 7 min and toss the tomadores. Cook for another 7-10 minutes until tender and slightly brown 
-remove tomatoes and continue cooking the garlic until fragrant (usually about 35-40min) 
-in a large pot add butter, finely diced onions, bell peppers, and carrots. Add a pinch of salt and cook until onions are translucent and the veggies are soft.
-add red chili flakes, oregano, salt, pepper, and tomato paste. Stir and cook for another 3ish min. Add the chicken broth, honey, basil, tomatoes and roasted garlic. Let simmer for 10 min 
-using a an immersion blender or normal blender, blend until smooth. Add heavy cream and serve! 
**I like topping it with basil, parm, heavy cream and pepper!!
