My favorite garlic mashed potatoes 🫡 I recommend for anytime anyplace, it is carb season mwuahaha recipe below!! 

Ingredients: 
-3lbs of Yukon gold potatoes (~6-7 medium potatoes) 
-1 head of garlic 
-1/2 yellow onion (diced v small) 
-1/2cup +2tbsp butter 
-1/2cup whole milk 
-3oz cream cheese 
-olive oil 
-smoked paprika 
-salt/pepper 

Recipe: 
-preheat oven to 400°F. Cut the top of the garlic off and drizzle w olive oil. Cover w foil and place in oven until soft, slightly brown and fragrant (about 40-45min). 
-while the garlic is cooking, peel/dice the potatoes. About 1inch cubes but doesn’t matter much as long as they’re the same(ish) size. 
-in a large pot, add potatoes to salted water! Boil until the potatoes are fork tender (15-20min). Strain and set aside 
-melt 1/2c butter and milk in a small pot (just need it melted and warm. You can use the microwave!) 
-in the same large pot add 2tbsp butter and onions. Cook until the onions are translucent and soft. Add salt, pepper, smoked paprika (measure with your heart :)). Add roasted garlic and mix well. 
-remove from heat and add potatoes back and (s)mash them up! 
***if you want zero potato pieces you can use a ricer (I like the texture of some chunks so I just mash it!) 
-add the melted butter/milk and 3oz cream cheese. Stir to combine :) 
-taste and adjust seasonings how you like! You can add more milk if it’s not the consistency you want :) 
-top w melted butter, pepper, and chives
