SWEET POTATO PIE > Pumpkin Pie, sorry I don’t make the rules, but enjoy these sweet potato pie cheesecake bars that are the perfect sweet treat for Thanksgiving 🦃🍂

INGREDIENTS: 

GRAHAM CRACKER CRUST: 
2 cups graham cracker crumbs 
2 tbsp sugar 
½ tsp cinnamon 
1 stick melted butter 
*par bake at 350 for 10 minutes*

CHEESECAKE BATTER:
24oz of Cheesecake room temp
¾ cup sugar
¼ tsp salt
3 eggs room temp
1 tsp vanilla extract

SWEET POTATO PIE FILLING: 
2 medium sweet potatoes 
1/2 stick of unsalted butter softened
¼ cup granulated white sugar 
¼ cup brown sugar 
1 egg room temp 
1 tsp vanilla extract 
1 tsp cinnamon 
¼ tsp tsp ginger
¼ tsp nutmeg 
¼ tsp allspice 
⅛ tsp black pepper 
¼ tsp salt 

*bake at 350 for 50 minutes, then let cool one hour, and set overnight in the fridge*
