Al Pastor is one of my favorite Mexican foods, and I love fusion recipes like this one. They remind me that cooking and recipe development should be fun!

PORK MARINADE:
2.5 lbs of pork shoulder thinly sliced and tenderized
6 chiles de guajillos
1 chile de ancho
2 tbsp oil for sauteeing chiles
½ white onion 
2 tbsp achiote
4 garlic cloves
1 bay leaf
1 ½ tsp salt
1 tsp black pepper
1 tsp oregano
1 tsp cumin
2 tbsp chicken bouillon
4 cloves
¼ cup white vinegar 
½ cup pineapple juice
½ cup water

OTHER INGREDIENTS: 
1 Pillsbury Pizza Crust
½ white onion diced
½ cup of diced pineapples 
2 cups of Mozzarella cheese
1 cup cilantro chopped 
1 whole pineapple
3 wooden skewers

*Roast in the oven at 275 for 2 ½ to 3 hours*
