BUTTERMILK PANCAKES 

(Makes about 8)

Ingredients:
1 cup all-purpose flour
2 tbsp sugar
1 1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
1 cup buttermilk (room temp)
1 large egg (room temp)
3 tbsp melted butter
1/2 cup blueberries

In a bowl, whisk flour, sugar, baking powder, baking soda & salt. In another bowl, whisk buttermilk, egg & melted butter. Combine with dry ingredients until just mixed; fold in blueberries. Heat griddle or skillet over medium heat. Lightly grease. Pour 1/4 cup batter per pancake. Cook until golden on both sides. Serve immediately or keep warm in a 200°F oven. Don’t forget the maple syrup for dippy dips.
