Shrimp Verde with Cilantro and Lime
Serves 4
Ingredients:
• 1 lb. (25-30 count) shrimp, peeled
• 1 Tablespoon extra virgin olive oil
• Salt and pepper, for seasoning
• 16 ounces Cookwell Green Chile Stew (about ½ of a 33 oz. jar)
• Juice of ½ lime
• ¼ cup chopped cilantro leaves
 
For garnish: crumbled Queso fresco, cilantro leaves, lime wedges
 
Instructions:
1. Heat olive oil in a large pan over medium heat. Add half the shrimp to the pan and season with salt and pepper. Cook shrimp about one minute a side, flip, season again and cook for 1-2 minutes more, just until pink. Use tongs to move cooked shrimp to a bowl. Repeat with remaining shrimp.
 
2. Add all shrimp and Green Chile Stew to pan and reduce heat to medium low. Add lime juice and cilantro and stir. Cook just until warmed through, about 10 minutes.
 
3. Serve shrimp and sauce on top of rice or in tortillas as tacos. Garnish with Queso fresco, cilantro and lime wedges. Enjoy!
