No better way to bring in the New Year than eating such a ridiculous amount of smoked prime rib (details below) that I’ll be in food coma long before midnight 😂 I hope everyone has an awesome New Year! 

- Traeger at 225 until 120 degree internal temp

- Pull it off and let it rest for 20 minutes 

- Crank it up to 475 and put it on back on the smoker for 15 minutes 

- Rest for 20 minutes
