Comfort carbs are always a good idea, and even though this recipe can get a little messy, we have @Mr.Clean and @Swiffer to help us clean up!!! #mrcleanpartner #swifferpartner Sour Cream & Onion Gnocchi For the Gnocchi: 2 pounds (4 medium) russet potatoes, wrapped in foil and baked at 350°F for about 1 hour and 10 minutes until tender 1 3/4 cups all purpose flour, plus more for dusting 1 teaspoon kosher salt 1 large egg For Assembly: Kosher salt 6 tablespoons unsalted butter 2 large leeks, white and light green parts only, halved, rinsed, and thinly sliced into half-moons Freshly ground black pepper Sour cream, for serving  Chopped fresh dill, for serving Make the gnocchi: Once the baked potatoes are cool enough to handle, peel the skin and pass them through a potato ricer onto a clean surface. Mix in the flour, salt, and egg, kneading until a smooth dough forms. Sprinkle with more flour until the dough is tacky but not sticky. Cover and let rest at room temperature for 30 minutes.  Dust a sheet pan liberally with flour. Divide the dough into 4 pieces. Working with one piece at, roll the dough into a long rope, 3/4-inch thick. Using a bench scraper, cut the rope into 3/4-inch pieces. Transfer to the prepared pan, tossing lightly in the flour, then repeat until all the gnocchi are formed.  Assemble: Bring a large pot of salted water to a boil. In a large wide-sided skillet, melt the butter over medium-high heat. Add the leeks with a heavy pinch of salt and pepper and cook until softened and beginning to caramelize, 4-5 minutes. Meanwhile, cook the gnocchi in the boiling water for 5 minutes. Using a slotted spoon or spider, transfer the gnocchi to the leeks with 3/4 cup of the pasta water. Cook for 2 minutes to incorporate, then taste and adjust seasoning with salt and pepper.  Divide between bowls, topping each with a dollop of sour cream and sprinkle of fresh dill, then serve.  #gnocchi
