Mini Blood Orange Bundt Cakes Ingredients 2 stick unsalted butter 1 cup sugar 4 large eggs 1 cup plain yogurt 1/2 cup freshly squeezed blood orange juice 1 blood orange zest 3 cups all purpose flour 1 tsp baking soda Glaze 1 tbsp blood orange juice 1/2 cup powdered sugar Preheat the oven to 350f. Butter the mini bundt cake pan, in a large bowl sift and whisk together the flour and baking powder. And add orange zest. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar on medium speed until light and fluffy, about 8 min. Add the eggs, one at a time, beating until each addition is incorporated before adding the next. Scrape down the sides of the bowl with a spatula when necessary. Add the flour mixture in three parts, alternating with the yogurt and orange juice, beating just until each addition is incorporated before adding the next; do not overmix. Scrape the batter into the prepared pan and spread it so that it is smooth in the pan. Bake until a toothpick inserted in the center comes out clean, about 20-25 minutes in the pan.
