Serves 6-8​

Ingredients​
For cauliflower nuggets:​
1 small cauliflower (about 1.5 pounds), minced (about 5 cups)​
1 egg, beaten​
1 cup breadcrumbs, for the nugget mash​
1 teaspoon garlic powder​
1/2 teaspoon onion powder​
1 Tablespoon minced parsley​
1/4 cup grated Parmesan cheese​
1/2 cup grated cheddar cheese​
1 teaspoon salt​

For coating:​
1/2 cup breadcrumbs, for coating the nuggets​
About 2 Tablespoons olive oil spray or brush, for coating the nuggets​
