## Caption

The Rel’s Royce ✨🫒🍸 I had this cocktail at Double Dragon in Portland and couldn’t stop thinking about it. It’s a sweet and spiced variation on a martini, but still balanced. Here’s my version!

Makes 1
2 oz olive oil gin (*see note)
.75 oz Cardamaro
.75 Cocchi Americano
2-3 bar spoons of olive brine
Bar spoon of Benedictine (optional b/c it’s expensive, you could sub in Cointreau or forego this step)
3 dashes of orange bitters
Ice
Garnish: lemon twist, olive

*Olive Oil Gin: In a sealable jar, add 3/4 cup gin and 1 tablespoon olive oil. Seal lid and shake to combine. Allow to sit at room temperature for 2 hours and then store in the freezer to solidify the olive oil. Once solidified, place a coffee filter in a wide jar or glass and pour the mixture in. It will slowly filter the fat out and leave us with a velvety texture.

Make it!

1. In a mixing glass combine olive oil gin, Cardamaro, Cocchi Americano, olive brine, orange bitters, and a big handful of ice. Stir for a minimum of 30 seconds (we want a good bit of dilution). 

2. Add a splash of Benedictine into your coupe, twirl to cover the sides and pour it out. 

3. Double strain the cocktail into the coupe and express a lemon peel. Add an olive and enjoy!
