The viral low carb zucchini wrap!
Inspired (again) from my friend shredhappens it’s SO GOOD I used manchego but good old cheddar or mozzarella works perfectly.

How to make it:
Preheat oven to 400º Soak up moisture out of zucchini by a sprinkle of salt and then gently press on the zucchini with a clean paper towel to pull moisture out. This helps the cheese to stick.

Assemble the  wrap on parchment lined baking sheet. 
Add 1 cup of shredded cheese to the baking sheet to shape a wrap.

Lay the zucchini over the shedded cheese
Sprinkle the leftover cheese on the zucchini Place in the oven and cook for 15-20 minutes. Let the wraps completely cool before assembling with add ins. ENJOY!
