Nutella Molten Lava Cake with strawberry sauce🍫🌋🍓

These Nutella lava cakes are balanced and go so well with the bright strawberry sauce — IMO everything tastes better with a little fruity something something. I adapted Chef Jean-George’s classic molten lava cake recipe into this Nutella version + included some tips bc I failed my first attempt.

♡Ingredients (makes 4 cakes):
* 1 lb strawberries, hulled
* 1/3 cup sugar
* 1 tbsp lemon juice
* 4 tbsp unsalted butter (plus extra for greasing)
* 3 oz semi-sweet chocolate, chopped
* 6 tbsp Nutella
* 2 eggs
* 2 egg yolks
* 1/2 cup powdered sugar, sifted
* 1/4 cup all-purpose flour, sifted
* 1/2 tsp vanilla extract
* Pinch of salt

Toss the strawberries, sugar, and lemon juice in a saucepan. Cook on medium heat until  bubbling (about 10–12 min), stirring occasionally. Once soft, blend it smooth with an immersion blender. Let it cool — it thickens slightly as it chills. 

Start by generously buttering your ramekins and dusting them with a bit of flour. Set up a double boiler by placing a heatproof bowl over a pot of simmering water, making sure the bottom doesn’t touch the water. Add butter, Nutella, and chocolate, stir until melted and smooth. Remove from heat.

In a separate bowl, whisk together eggs, yolks, powdered sugar, vanilla, and a pinch of salt using an electric mixer. Once that’s smooth and slightly frothy, slowly stir in your melted chocolate-Nutella mixture. Then fold in 1/4 cup of flour; just until combined. Don’t overmix!!

Pour the batter into the prepared ramekins. Cover with plastic wrap and chill for 30 minutes.

Preheat oven to 425F (it has to be very hot!). Once you’re ready to bake, remove ramekins from fridge, place them on a baking sheet, and bake 10 to 11 minutes. The edges should look set but the center should still be soft and jiggly. Let them sit for one minute, run a knife around the edge, then flip them onto a plate in one motion.

Dust with powdered sugar and serve with the homemade strawberry sauce. Enjoy!!

**You can also prepare the ramekins in advance and refrigerate for a few hours/overnight.
