March is National Kidney Month and chef Jeffrey Held is preparing a vegetarian dish that will help keep your kidneys happy and healthy: Whole Roasted Cauliflower with Red Pepper Romesco. 

Why cauliflower? It's a nutrient-packed vegetable that’s low in calories but high in benefits. Not only is it an excellent source of vitamins C and K, which support immune function, bone health, and wound healing, but it also provides folate, an essential nutrient for cell growth and development. Naturally fat-free and cholesterol-free, cauliflower is also low in sodium. 

Joining chef Jeffrey is Dr. Robert Montgomery, chair of the Department of Surgery at NYU Grossman School of Medicine and director of the NYU Langone Transplant Institute. Together they discuss the link between kidney and heart health, and why fresh, whole, unprocessed foods are so good for you. 

*Whole Roasted Cauliflower with Red Pepper Romesco*
Serves 6 to 8 as a side dish or 3 to 4 as a main course

*Ingredients*

_For the Cauliflower_
2 teaspoons ground coriander
2 teaspoons ground turmeric
2 teaspoons ground cumin
2 teaspoons garlic powder
½ teaspoon dried oregano
½ teaspoon black pepper
¼ teaspoon saffron
1 teaspoon sea salt
¼ cup olive oil
2 whole heads cauliflower

_For the Romesco Sauce_
2 red bell peppers, roasted, peeled and seeded
½ cup almonds, toasted
¼ cup sun-dried tomatoes
2 garlic cloves
1 teaspoon smoked paprika
1 tablespoon sherry vinegar
¼ cup tahini
2 teaspoons maple syrup
¼ teaspoon sea salt
fresh black pepper
¼ cup olive oil

_For the Garnish_
¼ cup almonds, toasted and crushed
1 tablespoon parsley, finely chopped
1 tablespoon chives, finely sliced

*Instructions*
Preheat the oven to 425°F. Combine the coriander, turmeric, cumin, garlic powder, oregano, sea salt, black pepper, and saffron in a bowl and mix thoroughly. Whisk in olive oil.

Remove the cauliflower leaves and trim the stems so that each head can sit on the pan. Transfer to a parchment-lined baking sheet. Brush on the spice mix, coating the entire head, top, and bottom. 

Roast for about 30 minutes and then turn the heads so the stems are facing down. Continue to roast for an additional 20 to 30 minutes. The cauliflower should be evenly and deeply caramelized all over.

While the cauliflower roasts, prepare the romesco sauce. In a blender or food processor, combine the peppers, almonds, sun-dried tomatoes, garlic, paprika, sherry vinegar, tahini, and maple syrup. Pulse until moderately smooth. Slowly drizzle in the olive oil and season with fresh black pepper and sea salt.
