The spicy, creamy sauce is so good, you'll want to lick the plate. Ingredients - 1 tsp. ground coriander - 1/2 tsp. ground cumin - 1/2 tsp. chili powder - 1 tsp. kosher salt, divided - 4 (8-oz.) boneless, skinless chicken breasts, patted dry - 3 Tbsp. olive oil, divided - 2 (2 oz. each) jalapeño chiles, sliced into rounds and seeded (about 3/4 cup), plus more for garnish  - 1/2 cup finely chopped yellow onion (from 1 small [6 oz.] onion) - 2 medium garlic cloves, minced (about 1 Tbsp.) - 3/4 cup chicken broth - 4 oz. cream cheese, softened - 1/4 cup finely chopped fresh cilantro, plus leaves for garnish - 3 Tbsp. lime juice (from 3 medium limes), plus wedges for garnish - 2 oz. sharp Cheddar cheese, shredded (about 1/2 cup) - Cooked rice Directions 1. Gather all ingredients. 2. Stir together coriander, cumin, chili powder, and 1/2 teaspoon of the salt in a large bowl. Add chicken and toss until evenly coated, pressing to adhere. 3. Heat 2 tablespoons of the oil in a 12-inch cast-iron skillet over medium until shimmering. Add chicken, rounded side down, and cook, undisturbed, until browned on underside, 6 to 7 minutes. Flip and continue to cook, undisturbed, until other side is browned an thermometer inserted into thickest part registers 160°F, 6 to 8 minutes. Transfer to a plate, and loosely cover with foil to keep warm (temperature will continue to rise as chicken rests). 4. Add remaining 1 tablespoon oil to skillet. Stir in jalapeños, onion, and remaining 1/2 teaspoon salt, scraping up any browned bits from bottom of skillet. Cook, stirring often, until softened, about 5 minutes. Stir in garlic and cook, stirring constantly, until fragrant, about 1 minute. Stir in broth and bring to a boil over high. Reduce heat to medium and cook until liquid reduces slightly, 2 to 3 minutes. 5. Stir in cream cheese and cilantro into broth mixture until smooth and creamy, about 2 minutes. Stir in lime juice and remove from heat. Add Cheddar cheese in 2 or 3 batches, stirring until melted and smooth before adding the next batch. Nestle chicken back into skillet. 6.
