The after shot. Our brioche dough is made with tangzhong (Google it), as we find it makes the most tender and flavorful bun and extends their shelf life too. We use tangzhong in many of our other pastries, including cinnamon knots, tea buns, fruit danishes and cardamom wreaths. Wishing you could smell the cardamom in the kitchen right now!
