Avocado Crema Yoast

Celebrating Cinco de Mayo with a spin on one of my favorite childhood breakfast dishes. Being half Mexican, chorizo con huevos were one of my favorite things to look forward to on the weekends for brunch at my family’s restaurant with a side of guacamole, crema, fresh salsa and homemade tortillas.

This version includes avocado crema as the base but made with Siggi’s skyr for more added protein (full ingredients below) then topped with a pasture raised egg cooked in chorizo and fresh cilantro

Avocado Crema Ingredients: 

2 medium avocados
5 oz siggisdairy plain skyr yogurt
1 sm bunch of cilantro
1 chopped jalapeno
3 garlic cloves
Juice of 2 limes
Seasoning Blend

Combine all ingredients into a food processor and blend until smooth, season to taste

Chorizo Fried Egg:
Cook the chorizo then make a well in the center adding in the egg, cover until the egg whites set 

Add the avocado crema to a piece of sourdough toast (or tortilla) then the chorizo fried egg, cilantro and fresh salsa

This toast is not only super flavorful, it’s also packed with protein from the Siggi’s skyr and pasture raised fried egg too! Totally recommend giving this delicious spin on a classic a try - hope you enjoy!
