You're setting yourself up for failure if you think a restaurant needs a leather banquette seating, Calacatta Oro marble counters, a maître d' or even an oven to churn out great food. Matter of fact, in cities like Ho Chi Minh City, Vietnam, and Istanbul, Turkey, a bánh mì and döner kebab are undoubtedly superior on the streets as opposed to inside an establishment.

Pat Rowe, member support manager of the Kitchen Incubator of Chattanooga, said food trucks and trailers give talented chefs and cooks a chance to express themselves full throttle, develop as entrepreneurs and break free from the shackles of someone else's system.
