In 2019, Jill pivoted from her sake brewing internship plans due to COVID and co-founded Utah’s Premium Craft Sake Co. Her journey taught her the importance of adaptability, mental health management, and embracing new skills. Despite challenges, including her identity as a half-Japanese entrepreneur, Jill proudly represents the Sake Association and was selected for the Advanced Sake Brewer Course in Niigata, Japan.
