Ingredients

Peach and Blueberry Filling
4-5 peaches, fresh 
1 cup blueberries, fresh 
1/4 cup sugar
3 tbsp lemon juice
2 tbsp cornstarch

Cobbler Topping
1 cup all purpose flour
1/2 cup cornmeal, medium grain
1/4 cup granulated sugar
2 tsp baking powder
8 tbsp butter, cold
3/4 cup buttermilk, milk, or cream

Preheat the oven to 375°F 
In a large bowl, toss together the sliced peaches, blueberries, sugar, lemon juice, and cornstarch until the fruit is evenly coated. Pour the mixture into the cast iron skillet.
In a separate bowl, whisk together the flour, cornmeal, sugar, and baking powder.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Pour in the buttermilk (or milk/cream) and stir just until a thick batter forms — do not overmix.
Drop spoonfuls of the batter over the fruit filling. It’s okay if some fruit peeks through — the topping will spread as it bakes.
Bake for 40–50 minutes, or until the topping is golden brown and the fruit is bubbling.
Cool slightly before serving. Best enjoyed warm, optionally with vanilla ice cream or whipped cream.
