Greek Bowl w/ Lamb Meatballs 🇬🇷🐑🥣⁣

In need of some healthy recipes ideas to make some delicious, home cooked meals during this time of social distancing? ⁣
⁣
Here's one of my favorite bowls that incorporates lamb since beef can be a bit harder to come by while the grocery stores are low on inventory. ⁣
⁣
These lamb meat balls pair wonderfully with the creamy tzatziki, fresh veggies, and of course, lots of extra virgin olive oil and feta cheese. 🙌🏼⁣
⁣
Even @ashleygaetan loved it, and she's not a big fan of lamb!⁣
⁣
Meatball Ingredients: ⁣
1 lb ground grass-fed lamb ⁣
1 egg (beaten)⁣
1 TBPS lemon juice ⁣
3 TBPS almond flour ⁣
1 tsp of each: coriander, cumin, oregano⁣
1/2 tsp garlic powder ⁣
2 TBPS minced parsley ⁣
salt/pepper to taste ⁣
⁣
Salad ingredients: ⁣
1 heirloom tomato ⁣
1/2 cucumber ⁣
Large handful of leafy greens ⁣
Fresh bell pepper ⁣
2-3 oz feta cheese ⁣
Top with: extra virgin olive oil, fresh lemon, oregano, salt, & pepper. ⁣
⁣
Directions: ⁣
1. Combine all meatball ingredients in a bowl and mix together well ⁣
2. Roll meat mixture into small meatballs balls⁣
3. Place meatballs on a baking sheet lined with parchment paper and bake at 400 F for 8-12 minutes  until cooked through (but not overcooked! You don't want dry meatballs) ⁣
4. Cut up fresh veggies and place in bowl with EVOO, seasonings, tzatziki and meatballs. ⁣
