I don't eat chicken all that often, but when I do -- making a grain-free breading and frying it in grass-fed ghee is one of my favorite ways to enjoy it 👌🏼 🐔🍗

With my garden producing delicious eggplants, I saw this as a match made in heaven 👨🏻‍🌾🍆💚

1 cup macadamia nuts (crushed in food processor)
3/4 cup almond flour 
3-4 eggs 🥚
1 eggplant 🍆
1 lb organic pasture-raised chicken🐔
Plenty of grass-fed ghee (or butter) 🐄
1/4 - 1/2 lb shredded grass-fed mozzarella 🧀
Optional: top with fresh grass-fed parmesan 
24 oz jar Marinara sauce 🍅
Fresh basil 🌿
Seasonings (salt, pepper, garlic powder etc.) •
