Ryan's Peanut Butter Cups 🍫🥜

A delicious, healthy spin on a classic childhood favorite of mine. •
•
These frozen goodies are perfect on a hot summer day! ☀️🌡️
•
1.5 cups @lilys_sweets_chocolate (or @cocopolosuperfood ) 🍫
*Must be a no sugar added, healthy chocolate 
3/4 cup peanut butter 🥜
1 TBSP grass-fed butter 🐄
1/2 cup +2 tbsp unsweetened shredded coconut 🥥
1 TBSP yacon syrup (or @lakantosweetener) 
Optional: High-quality sea salt and macadamia nuts to top with •
•
1) Combine peanut butter, grass fed butter, and sweeteners in a glass (or stainless steel) bowl over a pot of simmering water 
2) Mix in shredded coconut 
3) In a separate glass bowl over the pot of water, melt down chocolate. 
4) Put a thin layer of chocolate in a non-toxic silicone mini cupcakes tray, then put a layer of peanut butter mixture, then top with another layer of chocolate. 
5) Optional: top with salt and macadamia nut 
6) Place in freezer until frozen, then store in glass airtight container in freezer •
