BLUEBERRY LEMON BARS🫐🍋 follow @sweetportfolio for more dessert recipes.

These are the lemon bars from my spring soirée video :) they’re simple, bright, and delicious!! Nothing like a crunchy graham cracker with a rich tangy lemon curd.

🫶Ingredients
•1 cup graham cracker crumbs
•4 tbsp unsalted butter
•1/4 cup brown sugar
•1 pint (about 2.5 cups) blueberries
•1/4 cup sugar
•1 tbsp lemon juice
•2 large lemons
•2 cans condensed milk
•1 tsp vanilla extract
•1/2 tsp fine sea salt
•3 egg yolks

Preheat oven to 325°F. In a medium bowl, add graham cracker crumbs, butter, and brown sugar; mix using a spatula. Line an 8x8 baking dish with parchment paper (skip if using a silicone one like me) and add the graham cracker crumbs. Using your hands or the back of the spoon, gently push down to create an even crust. Bake for 12-15 minutes and cool down.

To make the blueberry compote, in a small saucepan over medium heat, combine blueberries, sugar, and lemon juice. Cook until the berries burst and the mixture thickens slightly, about 5–7 minutes. Let cool slightly, then blend until smooth. Strain if you want a finer texture.

Now, preheat oven to 350F. Juice and zest lemons; add to a large bowl. Followed by condensed milk, vanilla extract, and sea salt, and mix using a whisk. In a small bowl, whisk together egg yolks. Then, take the large bowl and slowly pour in egg yolks as you whisk the mixture together. Once everything is mixed in, pour the mixture into the cooled-down graham crust. Then spoon little dots of the blueberry compote on top. Take a toothpick and gently swirl them to create a marbled effect. Bake for 20 minutes until the bars are set (they shouldn’t darken in color). Cool down and then refrigerate for at least 6 hours, ideally overnight.

Remove from baking dish and cut into even squares. Enjoy!!
