Have you ever tried grilling a pizza/flatbread? The dough cooks in just a few minutes and gets super crispy every time – it’s our favorite way to make pizza in the summer and no fancy pizza oven needed! 

We always keep Roth cheeses & spreads on hand for summer entertaining – stock up for everything from burgers, to cheese boards, to easy apps! 🧀 You can find them in the deli section in a store near you #ReachForRoth #RothCheese #RothSummer 

RECIPE: 

1-2 chicken breasts
2-3 cups bbq sauce, divided
1/2 of a red onion, sliced into 1/2” rounds
Olive oil & salt to taste
10 oz pizza dough (store-bought) 
All-purpose flour for dusting
1 6 oz Roth Gouda Cheese, shredded
2 tbsp chives, chopped

To a small bowl, add the chicken breasts and 1 cup bbq sauce & marinate for at least 30 minutes.

Preheat your grill to 450F.

Drizzle the onions with olive oil and salt.

Place the onions and chicken on the grill and cook for 5 minutes, then flip, cooking for another 5 minutes, until well-developed grill marks form. Remove from the grill.  Let cool for 5 minutes, then cut the onion rounds in half, and dice the chicken. Coat the chicken cubes in about 1/4 cup of bbq sauce.

Generously dust a large cutting board with flour, then press and stretch the dough into a ~12”x5” rectangle. Dock the dough all over with a fork, being sure to puncture the dough all the way through. Make sure the grill grates have been cleaned after cooking the chicken, then use both hands to carefully lift the dough off the cutting board and onto the grill. Close the lid, and cook for 5-8 minutes, until the dough is cooked enough to lift off the grates easily. Flip and cook for another 3-5 minutes. 

Move the flatbread to indirect heat, then drizzle with bbq sauce, to taste. Top with 3/4 of the shredded cheese, then add the chicken and red onions, and the rest of the cheese on top. Close the grill lid and cook until the cheese is melted, about 5-8 minutes. Top with a drizzle of bbq sauce and the chopped chives.
