Director of Campus Ministry Fr. Chuck Frederico, S.J., is a professionally trained chef, and one group of freshmen asked him throughout the school year for a cooking lesson.
 
Earlier this month, in something of an end-of-the-year celebration, Frederico showed the group how to make a delicious Rigatoni dish at our Center of the Arts kitchen, which the group then enjoyed before setting off for summer. 
 
The group of students – which included some who were taught by Frederico – included John Weimer of Orchard Park (their “organizer,” said Frederico), Tony Franjoine of Orchard Park, Willie Franjoine of Orchard Park, Brody Campbell of Orchard Park, Charlie Bandura of West Seneca, Charlie Welsch of Amherst, Carter Ostrowski of Cheektowaga, Parker Krol of Lake View, Sydney Pratt of Kenmore, Derek Birkemier of Lockport and Liam Krist of Hamburg (not pictured).
 
Frederico’s Rigatoni dish included chopped tomatoes, tomato puree, garlic, sweet and mild sausage out of the casing, olive oil, fresh sage, parsley and basil – finished off with heavy cream and Pecorino Romano cheese and served with homemade garlic bread. 
 
The meal was made by Frederico – who is a trained Culinary Institute of America chef – as a step-by-step “how-to” experience so the students could bring the recipe home to their families.
 
The group prayed together and did an Examen-type conversation before cleaning up and heading out for the summer.
