Q: What inspired the new menu?
We update our menu twice a year to stay seasonal, on-trend, and to bring fresh, exciting options to our guests. It’s all about offering something new while keeping it approachable.

Q: What dish are you most excited for people to try—and why?
I’m really excited about the new Caribbean Grain Bowl. It’s 100% plant-based, but still incredibly hearty and full of bold flavors. It’s proof that plant-based can be just as satisfying.

Q: How do you balance creativity with what guests love most?
I focus on creating a well-rounded menu—something for everyone. Whether it’s vegetarian, plant-based, or gluten-friendly, I aim for food that tastes amazing first. Creativity is rooted in flavor, and that’s what our guests care most about.

Q: What’s something on the menu that might surprise people?
There are definitely a few fun twists! Our Dill Pickle Grilled Cheese is unexpected and crave-worthy. The Walleye Sandwich, crusted with kettle chips, is a favorite. We also have a new Street Corn Salad, which is delicious, and we are bringing back the very popular, Bananas Foster French Toast. 

Q: What’s your favorite part about leading the kitchen?
I love creating food that reflects my own style and getting to share it with guests. But even more, I love mentoring the team. I’ve had cooks follow me for nearly 20 years—some started as dishwashers and now run their own kitchens. It’s not just a kitchen, it’s a family.
