The oil sizzles and pops under the bright white encapsulating the perfectly runny egg yolk on the Waveland Cafe griddle. 

That egg and dozens a day like it are the stars of the popular University Avenue diner’s expansive breakfast menu. But owner David “Stoney” Stone said it’s eggs that are squeezing his business for cash. 

The Waveland, a nearly 40-year Des Moines institution known as Iowa-raised actor @prideofgypsies ’s favorite spot to grab a bite when he’s in town, purchases 30 cases of eggs a week, each containing 15 dozen eggs, Stone told the Register.
