CREAMY Thai Turkey Meatballs 💥🌱
The cozy winter meal you didn’t know you needed 😏 Everything about this recipe is packed with flavor, all with being dairy & gluten free! Try it out for your next dinner👇🏻

Turkey Meatballs:
1 pound ground turkey
1 egg
1/2 c panko breadcrumbs 
2 tbsp chopped green onion
2 tbsp chopped red bell pepper
2 cloves garlic, grated 
1 tbsp soy sauce
1 tsp ground ginger 
1/2 tsp of both salt & pepper 

Creamy Coconut Red Curry Sauce: 
1/4 onion, minced 
1” fresh ginger, peeled & grated 
2 tbsp red curry paste
1 c chicken broth
1 tbsp fish sauce 
1 tbsp corn starch
2 tbsp coconut sugar (can sub for brown sugar)
1 can coconut milk 
Juice of 1/2 lime
Salt & pepper to taste
Cilantro to garnish 

Preheat your oven to 400F and line a baking sheet with foil, spray with oil & set aside. In a medium bowl, combine the turkey & all other meatball ingredients. Using your hands, form golf ball–size meatballs (about 2 tablespoons each) & set on the baking sheet. Bake for 20 minutes or until no longer pink inside. You can broil for the last minute to get a crust if desired! 
For the sauce, heat 1 tbsp olive oil in a large skillet over medium. Add the onion & sauté for 3 minutes until softened. Add the garlic ginger & cook until fragrant, about 1 more minute. Whisk in the curry paste. Add the broth, fish sauce, coconut sugar, corn starch & whisk until it begins to thicken. Add the coconut milk, whisk until everything is incorporated & the sauce is smooth. Bring to a low simmer, add the lime juice, taste & adjust any seasonings as needed.
Return the cooked meatballs to the sauce, toss together occasionally & cook until the sauce has thickened, about 5-7 minutes. 
Garnish with chopped cilantro, serve over rice or veggies & ENJOY!
