SWEET POTATO SHEPHERDS PIE 🥧
The ultimate comfort meal during winter in my opinion 😉 Here’s my take with sweet potatoes & a little crunch on top - flavorful, filling, plus easy to make with cooking it together all in one pan!!

2 large sweet potatoes, peeled and cut in large chunks
2 tbsp olive oil
2 stalks celery, diced
2 large carrots, peeled and diced
1 small onion, diced 
1 lb lean ground beef, I use 85/15
1 tbsp tomato paste 
1 tbsp soy sauce
1 c broth (can use beef or chicken)
1/2 c frozen peas
1 tsp of fresh thyme / garlic powder / rosemary 
1/2 tsp smoked paprika / salt / pepper
Optional topping: panko breadcrumbs, grated parmsesan, parsley 

First make the sweet potato mash by placing chunks in a pot on the stove & cover with water. Turn the heat to high, bring to a boil & cook for 10-12 minutes, or until the potatoes are soft when pierced with a fork. Drain, add a splash of milk and 1 tbsp butter, mash until creamy, then set aside. 
Preheat your oven to 400°F. In a large cast iron or oven-safe pan, heat the oil on medium heat. Add onion, carrots, celery & sauté for 5 minutes until slightly softened. Add ground beef, use a wooden spoon to break apart while cooking 8-10 minutes or until the meat is browned.
Add seasonings, flour, tomato paste, soy sauce & toss together. Stir in broth, simmer for about 5 minutes, until the sauce is slightly thickened. Mix in frozen peas. Turn off the stove & use the back of your spoon to flatten the meat mixture into a single layer. Dollop the mashed sweet potatoes on top then use a spoon/spatula to spread it flat to the edges.
Sprinkle over panko/Parmesan if desired, bake the shepherd’s pie until slightly golden, about 25 to 30 minutes. You can broil the top for 1 to 2 minutes as well! Serve hot with chopped parsley & ENJOY!
