## Caption

This is for my sundried tomato lovers!! I have always loved marinating my chicken in yogurt- it gives it great flavor and keeps your chicken moist on the grill. This marinade is so delicious you will want to smother it on everything which is why I made a little extra to set aside and brush over the chicken before serving. I served these skewers over white rice and grilled some zucchini alongside the chicken for a complete meal. (Oven instructions included down below as well!)

Serves: 4
Total Time: 30 minutes, plus marinating time 

1 ½ pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup sundried tomatoes in oil 
1 cup Greek yogurt
1 cup fresh basil leaves
1 tablespoon red wine vinegar
1 teaspoon kosher salt

Instructions:
In a food processor, add the sundried tomatoes and oil, Greek yogurt, basil, vinegar and salt. Process on high for 30-40 seconds until combined. 
Reserve ½ cup of the marinade in a small bowl and refrigerate until you’re ready to grill the chicken. Add the chicken to a large bowl, tupperware or ziplock bag and add the remaining marinade over the chicken. Toss to coat the chicken in the marinade (it’s supposed to be a bit thick!). Refrigerate for at least 30 minutes up to overnight.
Add the marinated chicken pieces to a skewer, 4-5 pieces per skewer, without overcrowding the chicken. 
Heat a well greased grill or grill pan over medium high heat. Add the chicken skewers and cook for 3-4 minutes. Flip, brush with a generous amount of the remaining marinade, and cook for another 3 minutes or until cooked through. 
Serve over steamed white rice or with your favorite pasta and a side of grilled vegetables. We like to throw some zucchini on the grill with the chicken. 
*You could also leave the breasts whole and bake at 375 for 30-40 minutes or until cooked through.
