If you love my Teriyaki Chicken Meatballs, you HAVE to try these Hot Honey Chicken Meatball Bowls! For Episode 16 of my 20 Minute High Protein Trader Joe’s Dinner Series I wanted to make something that you would want to add into your weekly rotation which means it has to have minimal ingredients and maximum flavor. Both the meatballs and sauce are just 5 ingredients, most of which you probably have on hand already! Have fun with what you want in your bowl- I did white rice and broccoli but it would be great with any grain or veg. Enjoy!

Ingredients:
1 lb ground chicken 
1 egg
1/2 cup almond flour or breadcrumbs
2 cloves garlic, minced 
1 green onion, chopped (plus more to garnish)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon olive or avocado oil for cooking

Hot Honey Sauce:
1/3 cup sriracha or your favorite hot sauce 
1/3 cup honey 
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon white wine vinegar

Bowls:
Steamed rice or grain of your choosing 
Roasted broccoli or vegetable of your choosing (search Best Roasted Broccoli on my website) 

First make your sauce by whisking together all ingredients in a small bowl or measuring cup until smooth. Set aside.
In a large mixing bowl, combine all ingredients for the meatballs (except the olive oil for cooking) until fully combined. Form into small golf ball-sized meatballs and place on a clean plate or baking sheet, ensuring they don’t touch and stick to each other.
In a large skillet, heat the olive oil over medium heat. Add the meatballs to the pan and cook for 3-4 minutes each side, or until cooked through the center. If the middle isn’t cooked and the outside is browned, turn the heat down to medium-low and continue to stir the meatballs occasionally until cooked through. 
Add the sauce to the pan and simmer until the sauce is thickened, about 2 minutes. 
Serve on top of your rice and beside your roasted broccoli. Garnish with green onion and a generous drizzle of extra sauce.
