Welcome back to Speedy Soups! This nutrient-dense, protein-packed minestrone soup is everything I crave during the fall! Plus it makes 6 giant servings so it’s perfect for prepping during the week. Hope you love! 🤎

Ingredients:
1 tablespoon extra virgin olive oil
Optional: 1 lb uncooked Italian chicken sausage*, casing removed
1 small yellow onion, peeled and diced
2 stalks celery, diced
1 lb (about 3 cups) butternut squash, you can buy it pre-cut at most grocery stores
3 cloves garlic, peeled and minced
1 28-oz can diced tomatoes
6 cups low-sodium chicken or vegetable broth
2 teaspoons harmonyblends Mediterranean Blend (or Italian seasoning)
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
8 oz ditalini pasta
1 ½ cup green beans, chopped into 1-inch pieces
2 15-oz can kidney beans (or white beans), drained and rinsed
4 cups fresh spinach, roughly chopped

For serving:
Freshly grated parmesan cheese
Red pepper flakes
Freshly chopped parsley
Toasted bread for dipping

*If you want to make this soup vegetarian, leave out the sausage and begin by sauteing the onion and garlic in olive oil.

Instructions:
Preheat olive oil in a large soup pot over medium-high heat. Add in the chicken sausage (casing removed) and use a wooden spoon or meat masher to break up the meat. Cook for about 5 minutes until the sausage begins to brown.
Turn the heat down to medium, stir in the onion, celery, butternut squash, and garlic and cook for about 5 minutes until they begin to soften. Stir in the canned tomatoes, chicken or vegetable broth, Harmony Mediterranean Blend (or Italian seasoning), salt, and pepper and bring to a boil.
Add in the pasta, cover and cook on medium low for 10 minutes, stirring every couple of minutes. Add in the chopped green beans, kidney beans, and chopped spinach and cook for 4-5 minutes until the green beans and pasta are cooked. Taste and season with more salt and pepper if desired.
Ladle soup into bowls and top with parmesan cheese, red pepper flakes, and chopped parsley with toasted bread on the side for dipping.

Note: You may need to add a little extra broth when reheating.
