Marry Me Grilled Cheese 

Serves: 2

Ingredients:
4 slices of sourdough bread, or bread of choice
4 tablespoons butter, softened
1 teaspoon garlic powder 
1/3 cup Parmesan cheese, freshly grated 
1/4 cup Sun-dried tomato pesto, recipe below 
2/3 cup part skim mozzarella cheese, freshly grated 
2/3 cup sharp cheddar, freshly grated 
1 tablespoon Mediterranean Spice Blend 

Sun-Dried Tomato Pesto:
1 cup sun-dried tomatoes
1/2 cup pine nuts or walnuts
1/2 cup grated parmesan 
2 tablespoons chopped basil
2 tablespoons chopped parsley
1 clove garlic
1/2 teaspoon kosher salt 
1 tablespoons olive oil, plus more to thin out as needed

Instructions: 
First make the sun-dried tomato pesto. Add all ingredients to a food processor and blend on high speed until smooth. Add olive oil to thin out as needed. 
Next, make your grilled cheese. Generously spread the softened butter on the outside of all 4 pieces of bread. Sprinkle the garlic powder over the butter then add the Parmesan cheese on top. 
Melt 1/2 tablespoon butter in your pan over medium low heat. Place 1 piece of bread butter/cheese side down on the pan. Spread 2 tablespoons of sun-dried tomato pesto over the other side of the bread, then add the cheeses and seasoning. Place the other piece of bread on top, butter/cheese side facing up. 
Once the bottom side of the grilled cheese has turned golden brown, 3-4 minutes, flip the sandwich and cook for another 3 minutes or until the cheese is melted and the bread is golden brown. 
Repeat with the second sandwich. Serve immediately while hot with tomato soup to dip!
