👨‍🍳 Full recipe below: 

Ingredients
2 tablespoons olive oil
½ cup spring onion whites, sliced
3 cloves garlic, sliced
2 teaspoons smoked paprika
1 teaspoon coriander
2 red peppers, fire-roasted, chopped
¼ cup toasted almonds
½ cup sun-dried tomatoes, chopped
28 oz can whole tomatoes, pureed
¼ cup tahini
Salt
Black pepper
2 teaspoons sherry vinegar
5 whole eggs
Japanese nori-sesame seed mix
Fresh parsley, chopped
Fresh spring onion greens, sliced
Crusty bread

Instructions
1. Heat olive oil in a medium cast-iron skillet or pot. Sweat spring onion whites until soft and translucent. Add sliced garlic and continue to stir.
2. Add smoked paprika, coriander, and a sprinkle of salt and continue to stir, allowing the spices to toast for about 1-2 minutes.
3. Add the chopped roasted red peppers and almonds. Add sun-dried tomatoes and whole pureed tomatoes, turn down the heat, and cover. Bring the sauce to a gentle simmer.
4. Add tahini. If sauce is getting too thick, add water.
5. Add the sherry vinegar.
6. Using the back of a spoon or ladle, make five small divots in the sauce and crack an egg in each.
7. Season with salt and pepper.
8. Turn heat down to low and cover and let simmer for 4-5 minutes or until the egg white is no longer translucent and there is a film over the yolk. The eggs should still look soft and if you poke the yolk with a fork, it should be runny. Cook for longer if you don't like soft eggs.
9. Remove from heat. Add a drizzle of olive oil. Garnish with more toasted almonds, Japanese nori-sesame seed mix, fresh parsley, and the spring onion greens. Serve in the skillet with warm bread
