1. Oil Selection: Using a high smoke point neutral oil is key when cooking on the wok. My oil of choice is avocado oil which has a 500F smoke point, which is perfect for stir frying at higher temperatures. 

2. Mise en place: All of your ingredients, oils & tools should be prepped next to the wok before you start cooking. The heat is hot & FAST, so ingredients need to be added in quickly. I love the Outdoor Wok Station because it has plenty of prep space & tool hooks, so everything is in arms reach! 

3. Heat Management: Don’t be afraid to adjust the heat of the gas throughout the cooking process. The wok heats up quickly and retains a lot of heat, so start off with low heat when sauteing delicate ingredients like aromatics, then crank the heat up to high when the wok is full of meats, veggies, etc. to incorporate that wok hei! 

4. Utilize the bottom rack: We put a lot of thought into designing the wok station, and including a bottom storage rack was essential. It allows you to store clean dishes while you’re cooking and has enough space to transfer dirty ones from the top prep space to make room as you cook. Use this space to your advantage during the quick cooking process! 

5. Wok Care/Maintenance: After every cook, add some water to the empty wok and use the wok brush to scrape off any residual food bits over high heat. Remove the water and dry the wok completely, then add a thin layer of neutral oil over the heat and rub it in with a paper towel to season the wok for the next cook. Close off the propane tank, wipe down the wok station, then cover it & keep it in a dry place to keep it in pristine condition for many wok sessions to come!
