Supper Club, the French way! 🌼🥖🍒🥂🧈✨

Travel is one of the best ways to reset creativity! Before our trip to France I was feeling drained. Turns out, all I needed was a break from social, sea air, time with friends, and endless delicious meals, both in restaurants and in our kitchen! I came home with so much inspiration, so why not pour it into a Supper Club?! 🧚🏼‍♀️✨

Supper Club No. 20 was a marriage of French technique and PNW summer bounty. We are incredibly spoiled in this region not only with local veg, fruit, meat, fish, and dairy, but also world-class wines (and no humidity ayeeee). 🥂 So yeah, I didn’t quite stick to the book, but instead worked with what I could find & whatever sparked joy. 

I’m recapping the event in two videos this week, but here’s a taste!! 🇫🇷

welcome cocktail & snack — hugo spritz and pissaladière (basically a focaccia baked with caramelized onions, black cured olives and anchovy) 🍹

first — kanpachi crudo with corn purée, cherries, basil oil, lime and salt (we had a fantastic crudo with corn purée in Paris so I wanted to recreate it in my own way) 🐟🌽

second — the supper club salad with 1924 cheese (the original roquefort before they reclassified the cheese to not include cow milk) and ripe figs 🧀

surprise! — cold pea soup shots 🫛

third — duck confit with crème de cassis sauce, grilled apricots & cherries, and fresh basil (served with baguette to clean the plates!!! v important in France!!!) 🍗

fourth — tarte tropézienne with fresh strawberries and decaf 🍰
