Ingredients:
2-3lbs pork belly, skin removed, sliced into ½” thick cubes
2 tbsp hot sauce
1 tbsp each soy sauce, toasted sesame oil, and rice vinegar
2 tbsp hot honey
3-4 cloves garlic, minced
Ginger, grated
Orange juice and zest, to garnish
Avocado oil
Salt and pepper, to taste

For the Rice:
3-4 cups jasmine or short-grain rice, prepared to al dente
Green onions, finely sliced
Hot honey aioli, premade or store-bought
Sesame seeds, to garnish

Instructions
Marinate pork belly cubes in avocado oil, hot sauce, soy sauce, sesame oil, hot honey, vinegar, garlic, ginger, orange juice, salt, and pepper for at least 1 hour, up to overnight. Meanwhile, warm your Lodge Cast Iron pro-grid with hot charcoal. Lightly oil the griddle, then sear pork over high heat until cooked through, crisp, caramelized, and tender to the touch. Remove pork, then toss in rice and scallions, ensuring to scrape up all the browned pork bits. To build the platter, layer fried rice with pork, dress with chives, orange zest, and sesame seeds, then finish with the aioli. Serve hot and immediately.
