This is the only cobbler recipe you’ll ever need! 🫐🍓🌿You can use it with any fruit - fresh or canned! You can also add fun herbal fusions to the batter! My favorite one is a Blackberry Sage Cobbler. Some other combinations you could try include:
🌿Blueberry with coriander.
🌿Strawberries with basil.
🌿Peaches with fresh thyme.
🌿Raspberry and mint.
🌿Cherries and rosemary
🌿Apples and cinnamon
🌿Pear and Clove
It’s the perfect way to use up those herb and berry harvests in such a simple and easy to remember recipe!
Recipe:
1 cup of self rising flour (gluten free 1:1 can be used)
1 cup of sugar
1 cup of milk (dairy or dairy free)
1 stick of butter (1/2 cup)
1 pint (or can) of fruit - general guide. Use as much or as little as you’d like 🥰
Fresh or dried herbs - to taste
Preheat oven to 375°. Place your butter in your baking vessel and stick in the oven to melt while it preheats.
Mix your flour, sugar, and milk together. Don’t worry about clumps! They’re no big deal. Add in desired herbs to taste. Remove the buttery vessel from the oven and pour the batter in directly over the melted butter. Top with desired fruit and sprinkle a little more sugar on top. Place back in the oven to cook 20-25 mins until golden and gooey! Eat warm with ice cream! Enjoy!
