🍓 My valentine and I have been recently obsessed with chocolate covered strawberries!  So let’s make these delicious chocolate covered strawberry cupcakes

Makes 12 large cupcakes 

Ingredients:

Chocolate Cupcakes:
1 cup all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1/2 tsp instant espresso powder
1 tsp baking soda
1/2 tsp salt
1 large egg
1/2 cup hot water
1/2 cup buttermilk
1/2 cup vegetable oil
1 tsp vanilla paste

Strawberry Buttercream
1 cup unsalted butter (room temperature)
5 cups powdered sugar
2 strawberries (chopped)
Pinch of salt
3 tbsp heavy cream

Chocolate Covered Strawberries:
12 Strawberries
1 pack of Ghirardelli chocolate wafers
