## Caption

This very humble but very delicious carrot cake requires no special skills to decorate. Use an offset spatula to spackle on a carrot for decoration. Or don't! Use pecans or toasted coconut or just leave it plain. This cake is perfect for your Easter gathering or just to celebrate spring (in theory- it's freezing here!).
